Facebook is php (poor bastards)
Orkut came out before rails existed, so I'm guessing they haven't bothered to rewrite. Don't know anything about Hi5.
Twitter probably. As for "made with Photoshop" that doesn't exactly prove anything. You can make 1x1 pixel images with Photoshop too, it's a bit like saying "the text was written in pen"
