BTW, if you really want to consider documentaries, then I'd like to throw this in the lot. It ends with the possibility that Jesus wasn't resurrected, but he actually died in Kashmir.

That's actually as reliable as National geographic or History Channel documentaries as none of these are based on reliable evidence(primary source written by eye witness).

The beautiful thing about history is that you have multiple accounts on particular events and it is up to the historian/reader to determine which one is more realistic and less biased.
Also, countless things in history are supported by archaeological evidence
Oh and historians have to be skeptical and critical of every single primary sources, which is why it is a wonderful field.

For example, let's take a look on Herodotus' account of the Scythians. Some of the practices he described have been confirmed by archaeological evidence but it doesn't mean that the other practices he describe are also true(far from it).
Because to me I have had instances in my life which I accept as proof that my God exists and that Jesus was his son. I used to be just like you my friend demanding that I needed empirical evidence but as my life started changing and I started having things happen I started questioning the things that my senses told me and started to realize, that there is more than meets the eyes in this world/universe
