check "interfering with an opponent" part. "in the opinion of the referee" isn't exactly about geometry, it's all subjective.
Those are the "special case" rules, when the referee might be on the fence about what to do. But if there's a regular offside situation without any corner cases, then referee just follows the simple geometry rules, there's no room for him to say "in my opinion...". On the other hand, basically any handball situation involves referee's opinion about what happened, and it's always subjective.

In the case of disallowed goal there was a clear offside line for a player who stayed right in front of the keeper and prevented the goalkeeper from playing because he stayed right in front of him. The offside line is not debatable, neither is the fact of preventing goalkeeper from playing due to their mutual positioning. Some people here wrote that Ajax player didn't have the chance to disappear from the spot, but that's exactly what I'm talking about - player's intention didn't matter, it was just a geometry.

So, yes, strictly speaking, offside situations also might involve some subjectivity, but those are rather rare cases. Much more often it's about referees not seeing offside or seeing it when it didn't happened for, again, geometry reasons, but that's not about the rules but rather about their professional skills.
