Those people can sue those businesses and if necessary take it all the way to the Supreme Court, but a business has every right to demand what it wants of employees. If the employee disagrees he can either quit and find work elsewhere or be terminated and sue for wrongful dismissal. End of.

He isn’t sure they are safe because no long term studies. Never mind that vaccine side effects don’t work that way (as in they don’t randomly show up years down the road, or not in the case of any vaccine historically. Within 6-8 weeks always).
