I sometimes wonder if the reason big corporations hold onto people they don't need is that they are bargaining chips when confronted with governments. No government wants to anger a company that employs tens of thousands of people. Without employees though it's a lot easier to force them to comply.

If I have the opportunity to take a job that pays 30% more than what I make now but has absolutely nothing to do with what I got my degrees in, do you think I should take it? Not sure of the long-term opportunities with it.

Will it be fun? Is there opportunity to grow professionally? Do you really want a long term gig? Are you someone that needs to follow the safe route?
