Might have to ask you about Tanzania and Zanzibar. That's on our list, especially for safari.
One main thing I would say about safari. Don’t sign yourself up for too long a safari. Ours was 6 days (last day was mostly transit back to Arusha). By the end, we were feeling pretty stir crazy as we’d seen all the more elusive animals that we had wanted to see (leopards, serval cats, a couple snakes, leopard tortoise, crocs which were rare in the area we were in), and were pretty much ready to never see a zebra or wildebeest again
Highlights were a Leopard lounging in a tree and then climbing down out of it, a group of Cheetah brothers playfighting, and Hippos roughhousing in the water. Giraffes are also super cool to see up close. And seeing a wildebeest calf being born and then spending 15 minutes figuring out how to walk was pretty neat. Lions were fun to see up close but they don’t do anything, just sleep mostly lol
We did a mix of mid-range and luxury accommodations. The tented safari camps can be absolutely stunning. Both setting and just how luxurious they are. I don’t know what kind of budget you would want to set, but there are some ridiculously luxurious lodges if that’s what you are looking for. More reasonable price, the more luxurious tented camps are super cool to stay in, the meals are delicious, and we heard lions right outside our camp in the night at both places we stayed. After dark they had escorts to take you from your tent to the restaurant or lounge tent.
