Any authentic recipes for this type of stuff?
I don't know about authentic but I like this Mexican variation of ceviche
The traditional ceviche normally uses tilapia, sea bass or snapper but you could probably use other fish too.
The recipe in the video uses limes, lemon and orange juices to cook the fish whereas the traditional recipe only uses limes I believe, but I like that combination. Never add cucumber to it, that's what Mexicans do. The one thing I don't like in that recipe is thr nachos, I'd much rather have ceviche with boiled sweet potato on the side for that acidic-sweet contrast.
Also make sure you prepare enough lime/lemon/orange juice to cover the fish while it "cooks" in the fridge.

Mexican cuisine is the only one that stands out in the whole continent imo. Argentinian and Brazilian cuisine is just grilled meats. The rest of the countries there don’t really have anything special.

Arepas are overrated though.
