Just returned back home from 12 days in Peru. Spent most of the time in Lima, Ollantaytambo, and Cusco. Machu Picchu was certainly pretty cool, but perhaps not as amazing as I expected it to be. I'm sure if I was time machined back in the 15th century I would think otherwise. But I thoroughly enjoyed Miraflores and Barranco in Lima - I could easily live in the former. Fantastic restaurants, bars, and surfing. Will definitely go back.

You know, I'm not sure I agree with that. I absolutely love the ceviche, but regardless of where I ordered it, the taste was pretty much the same across the board with not much variation. Even in the mountains where they used trout instead of snapper or whatever. Lomo saltado is also very basic, IMO. Fried chicken was good. And the coffee was fantastic of course.

I'd also say Greek food >>> Peruvian

Is it though? I know some of it is quite good. But most South American cuisine outside of South America is generally overtaken by Peruvian cuisine. I mean, it's really good. But it's often treated as if South America has nothing else to offer.

I agree about ceviche tasting the same. I can make a killer ceviche at home. There is so much more to Peruvian cuisine than ceviche though.

Any authentic recipes for this type of stuff?
I don't know about authentic but I like this Mexican variation of ceviche



The traditional ceviche normally uses tilapia, sea bass or snapper but you could probably use other fish too.

The recipe in the video uses limes, lemon and orange juices to cook the fish whereas the traditional recipe only uses limes I believe, but I like that combination. Never add cucumber to it, that's what Mexicans do. The one thing I don't like in that recipe is thr nachos, I'd much rather have ceviche with boiled sweet potato on the side for that acidic-sweet contrast.

Also make sure you prepare enough lime/lemon/orange juice to cover the fish while it "cooks" in the fridge.

Arepas are overrated though.

By special you mean anything that Americans can turn into fast food?

Jk, you should try a Brazilian feijoada though.
