After you beat the game, is there a point where you just get back in the animus and return to Florence indefinitely to run around and kill people, etc.?

After you fight off the Abstergo thugs and get onto the van, you should automatically in the Animus and you should be able to go anywhere you want. Not just Florence or San Gimingnano.

Are the areas connected, or do you have to change the places via the animus?
