Check this:
No idea what to call it...
2 cans of black beans, drained in collander
1/2 sliced orange bell pepper
1/2 sliced green bell pepper
1 sliced chili (you preference, I used a Jale)
1/2 diced medium sized onion
2 gloves garlic
salt, pepper, oregano, cumin (to taste)
Simmer for 20 minutes
Throw on tortilla with shredded cheese (I chose jack, but again up to you) and
other toppings (sour cream, salsa, rice whatever).
Fold and enjoy, or spoon feed yourself "openface" style.
PS. Almost forgot, I put 1 tspn veggie oil at the beginning.
