I don't think that Poland is possible (at least not without the Germans and the Austrians

).
The obvious choice is Moldova, and it should be an easy target given its small size, weak military and the presence of Russian troops there already. Any move in the Baltics would immediately test NATO's article 5 and put Russia at war with everyone.
After Moldova, I think it might be someone in the Caucasus, and almost certainly someone from the former USSR (which rules out Poland).
As for the Baltic states, we might see airspace violations, naval maneuvers and large scale military exercises near their borders, in order to test NATO's cohesion and readiness to respond forcefully. But not more than that.
Then again, if this was early 1938 I'd have said that Hitler was satisfied with Austria and wouldn't occupy Czechoslovakia, and certainly not Poland
