I'm sure there will be 2 versions of the tablet: a wifi-only, and a wifi-gsm. You should be able to make calls with the latter.

There's only 1 ICS ROM I'd recommend: CyanogenMod 9.

Umm I haven't used it to be honest, but from what I've read, I think you can:

1. Sync/transfer your iTunes library to Doubletwist, then
2. Sync your Android device with DoubleTwist.

you also have the google music option if your music is DRM free and that takes up no space on your phone its all cloud sync
