IMO, most of you are right when you see Sanchez as a more counter-attacking player. I would also say that he is not lost in possession style either though. I'd say he's more like a 60-40 balance between the two, favouring the counter attack.
But that's not a bad thing!
We don't have any forward options that work well in a counter attack except Matri because of his great movement. Mirko is too lazy to run the whole field, Quagliarella can't run period and Giovinco can only run (no brain). Llorente is questionable IMO. I don't want to rule him out completely but at this point from what I've seen, I can't say he would be a reliable countering option. Forget Anelka and whatever else we have on loan, they're not here next year.
Counter attacking is still a highly effective style of play not just to win games but to conserve energy throughout the season. It also lets you play worse players more comfortably. It's hard to fit in backups in a possession system because you need actual superior footballing talent to hold possession from another team all game. And then the obvious advantage of having TWO effective styles of play before you even factor in formations is a bonus when opponents are game-planning you.
FFS, we were countering against Celtic. Are we sure there will be no other times where it would be smarter to sit back? Of course there will be.
The games against Inter, Milan, Shakhtar and even Fiorentina at the start would not have had the same outcome if we could have switched gears and absorbed their pressure a bit easier or had a threat to counter that they had to respect. We are still susceptible to pressuring sides. IMO, we've been fortunate that most sides prefer to play timid tactics against us instead of pressuring us throughout the match.
Against Celtic we did not look good, I don't care what anyone thinks. The overall strategy was ok but the personnel did not perform it well with the exception of our defense and one player up top: Matri. If you take Matri, a player that can counter effectively, out of that game, I'm not even sure we win.

I think Sanchez is a very good player, but better than JoJo?
