How did you prepare the ostrich?I havent had that i quite some time.
Before roasting I do nothing with the ostrich pieces. Only if I see a tendon or something that shouldn't be in there I cut it out.
After roasting just a little pepper and salt over it and then I put it on a warm plate under aluminum foil and let it rest a few minutes.
Ostrich has his own strong taste so there shouldn't be much added to it. Maybe some sauce that underlines the taste.
