How do these things usually go? Will things build up steadily or do they tend to be quiet early and involve a flurry of activity as time is close to running out?

All the action happens in the last few mins of the auction. Unless some jerk bids high early on which fucks it up for the rest of the potential bidders

Depends on the item and also who is bidding, but generally they will start slowly and then you'll get a flurry of late bids if it's popular. If it's extremely popular then you can get get bids throughout the auction. If I really want something I'll wait until there are about 20 seconds left and put in my top bid. Like anything you have to have a ceiling because it's really tempting to beat people with 'just a bit more'.
Like Dru says, sometimes some noob will put in an early high bid, which might seem low (like 99p) but their maximum bid could be really high so it'll shoot up. You'll get the hang of it very quickly.
