I find it useful. Sometimes someone thanks me and i dont feel like they deserve a your welcome but im at work so i cant tell them i only did it because i was obligated to so its kinda like giving a non answer
Pretty often during a conversation and the other person is telling a story or explaining something, I say mmhmm, and that shit drives one of my close friends crazy

Might be different from person to person, but imo you can also take it as some sort of "no problem" or "goes without saying", like the person doesn't want to make a fuss about it.
