Had a bunch of French Gimlets last night. Great summer drink.

1.5oz good quality Gin (Plymouth is my fave)
1oz St. Germain
1oz Tonic or Club Soda
squeeze of lime
dash of Agave
Mix together in ice
Finish with a splash of Chambord

Today being St. Anthony of Padua's day (one of our patron saints here in Lisbon), everybody is in recovery with the city holiday off from last night's debauchery of sardines, beer, and kinky sh*t.

And yes, the "Italian" St. Anthony of Padua was actually a Lisboeta Portugueezer. Take that, Meloni.

So on a day like today, the great lazy summer drink is a porto tonico. Like a Portuguese version of the G&T.
  • 2 oz good dry white port (I like Niepoort and a few others: Kopke, Ramos Pinto, Ferreira Dona Antonia all good)
  • 4 oz tonic water (the Portuguese use Schwepps but you can use Fever-Tree Indian if you must)
  • Garnish: Lemon and cinnamon (traditional) or orange peel and fresh mint or rosemary (modern)
With a big-assed glass filled with ice, pour in the port and top with tonic. Stir gently and combine with your preferred garnish.
