Almost all of these are upgrades, except maybe Gatti vs Chiellini (who has serious injury concerns at this point) and Milik vs Morata.

Gatti vs Chiellini - Gatti is still unkown for me while its not exactly prime Chiellini
Di Maria vs Dybala - Di Maria is the better player but he came for one year while Dybala would have been more than just a one year deal.
Pogba vs Ramsey - Obviously Pogba
Paredes vs Arthur - Paredes would be better for us but Arthur might show some nice moves with Liverpool
