The fact that refs are more willing to call a foul for rather than against a big team or a football star is quite normal and witnessed in all sports all over the globe. Not saying it's fair, but it's the way it is. Just look around for things in real life.
In Italy it's noticed more because, as swag already mentioned, it's spotted out more with all the shows and moviolas that really look like a football surgent was operating on the game ... everything sliced to tiny details. Sure, it's easy to be smart and see the wrongs/rights when you have seen slow motions, but we all know things don't work like that when you are on the pitch and you have to make a decision in a few seconds. Not to mention that sometimes the refs can't be as close to the 'action' as a camera.
Then there's the ref's way of letting the game being played aka some like it more rough some call every small foul ... really there's no rules, beside the obvious ones. All this gives something to the game we so like. One time we hate this thing one time we love it.
It happens that sometimes weird calls are made (dive/no dive, off-sides etc.) and for that to avoid my solution would be to add two more linesmen as one can hardly see what's going on on the other side of the pitch. Just no instant replys please, our lifes are becoming more and more robotish enough without messing it with the beautiful game.
