I'm pretty meh about this deal TBH, I would like to get him but defo not for the numbers thrown around. I wouldn't lose sleep eitherway.
I don't know about the other options you mentioned, but Griezmann would be mine even if he would cost more. But I can already see him with PSG jersey.

And Messi was worth 80m + at 21, not that Barca would have ever sold him. The guy is probably worth 150m now.
If Iturbe improves even a little from last year, which is likely as he is barely 21, his price tag will be 40m + next year. Sanchez was bought by Barca for 38m after a season of 12 goals and 10 assists. At age 22. At 21, he had 5 goals, 4 assists. Iturbe, at 20 had 8 goals and 5 assists. Iturbe and Sanchez are the same height and very similar build, and play very similar games (both aged 21).
Iturbe is great at +- 25m. Wait a year, if he improves, we miss out on a player that could easily turn out as good as Sanchez.

They certainly are from a 20 yr old. 25m easy. The likelihood that he builds on last season is immense. And that means 40+ m next year. He's one year ahead of Sanchez on the development curve, and is likely to turn into a similarly skilled player.

There has been great inflation since then. With this post it's indicative.
Iturbe has low wages and is very probable to maintain his market value even if he doesn't improve.
People say this is a risky move but with prices for young players nowadays I believe there is less risk because it will be easier to recoup our money.
22M-25M is a fine price for me. Even if he stagnates for a couple years we should be able to get 15M out of him. It is a small risk in that sense but if he reaches his potential the reward could be immense.
