As we're reminded before every game "Celtic was founded in 1888 as a club open to all". The club was started as a charity to provide starving children of Irish catholic immigrants with food. At the time (and many would argue this still goes on today) Irish immigrants were treated like shit and had no real community to bind them together. Celtic helped to change that and really that's how the Celtic vs Rangers thing all started and it's the Irish/Catholic vs the Scottish Protestant/Unionist divide which is at the root of most of the vitriol.
So obviously tradition gets handed down, and Irish/Catholic families will tend to bring their children up to support Celtic as they do.
