You think a subject that directly involved 100 million people from over 30 nations killing almost 80 million of them and still has profound effect on the world today is overdone?
if we are measuring importance through numbers and effect down the years, then the battle of kadesh, invention of the wheel/fire/penicillin all eclipse that and you dont see many shows about it. And as far as entertainment value, yes the subject is way overdone imo

It defenitely is overdone. Atleast too much of it is in the same formula, can tell interesting stories with WW2 as the backdrop, but not repeating the same type of story and battles as been done for far too long.
Then you should definitely watch The Pacific. There are a few meh episodes, but overall it's easily recommendable. Oh, and there's a episode taking place in Australia (I even think it's Melbourne), so there's that too.
I think Vietnam is even more overdone than WW2. What really isn't done nearly enough is World War 1 which is always overshadowed by atrocities of WW2 but it was itself a monstrous war. I can't even think of any decent, epic movie or TV show based on this period.

I don't really like old war movies. I would rather see something new made in the mold of Band of Brothers, Saving Private Ryan, Letters from Iwo Jima. It's Kubrick though so probably worth watching.

Just watch it. You'll love it. If you want a Spielberg movie about WW1, you could watch War Horse. But of course eating your own feces would be more enjoyable.
