I would guess it all depend on how much Gilardino would cost vs how much Juve could get for Quagliarella.

If, at the end of the day, there is a net gain on the books, then I suppose it could make sense, and to be honest, Gilardino isn't any worse than Matri or Quag, and fits the role of a backup CF better than Quag would
