In the 3-5-2 Juve don't move the ball around all that well or quickly even with Pirlo in the team and they are also well protected against counter attacks due to having the three CBs back at all time, so losing the ball isn't as much of a concern.
With 4-3-3 there are a lot of passing options and the potential for Juve to really damage teams by moving the ball fast - something only Pirlo really does. Also, Juve tend to leave themselves more open when playing 4-3-3 and vulnerbale to counter attacks, so it is essential to have a player in that role who can be relied upon to not give the ball away.
I'd try Isla in that role, but I suspect he'd struggle due to not having space in front of him to move into.
Jovetic could be used there against weak teams, but would probably leave Juve exposed against decent sides. Also, you wouldn't get Jovetic playing anything like his best in that position.

It's because he was very good in Serie-A. Play seemed to suit him a lot more. If you judge him only by his Man City performances, though, I can understand why one wouldn't want him.
