The best one I've ever had was from a little stall on the side of the road in the country side just out of Rome. It was just a plain thin base pizza with sauce on top and some fresh basil. No cheese or toppings. I couldn't believe how incredible it really was. I'm salivating at the thought

Italians salivate over the milky water it comes in. What passes for mozzarella in most places is some rubbery, flavorless version of Monterey Jack. A real, soft mozzarella di bufalo is one of the most amazing things eaten simply and plainly. Or with a little basil, olive oil, salt, and fresh tomato.
