Although I've rarely used it, I do prefer almost anything cooked over charcoal, and I've definitely eaten more shit cooked over true wood fire than any other type of grilling apparatus.
Bags of charcoal, cans of lighter fluid, cleanup after a couple uses, it's not practical during the week. Sometimes we bring out the charcoal grill on the weekends.
It's obviously not as simple as turning a knob and pressing an igniter.
If you know what you're doing you have have cook-able coals ready in about 20 minutes with briquettes or 10 minutes with lump. So you set your coals, go inside and prep everything, come back outside, and cook.
