It depends how you uploaded them initially, cause to upload you can either sync ipod with a file and it does everything for you, or else you could just transfer from one file to another option on itunes.

I used to use the first method, but if you ever took a song out of the file, it would disappear off your ipod, while for the second one, the only way to get rid of a song on your ipod would be by connecting it to itunes and deleting it
