I'm not sure of that at all, Hernanes ihas experience and basic foundation in his skillset to do the regista role and be ok as substitute aslong as he gets support and you limit his exposure, should get it done (compared to the alternatives that is). Decent spreading the ball and holding it up is main necessity. Sturaro CANNOT for the life of him hold the ball let alone passing it around decently in a fixed position, he is a mobile hardworker who needs to have the ball as little as possible and just hound others. Asamoah is good technically, but is at his best transporting the ball himself or chasing it down instead of standing around spreading it. Takes certain positioning and natural composure to do this role. Kwadwo is a very mobile box to box type.
Despite his obvious limitations, Hernanes should be better choice then them at it. And Allegri agrees because he used to prefer Padoin there instead of Sturaro for example. It was either Lemina or Hernanes in that role for a reason in the beginning.
This only proves we BADLY need to get a good Marchisio backup. Clear flaw in our foundation. Or hope Lemina is healthy and grows into this role, he is the best hope for it, even if his best position should be where Khedira plays.

FFS its Hernanes, I dont like him. But its basically what we are left with considering the playing style and roles of the players we have, the only two others who played holding mids in this season besides him are not available. So he will get the role per automatum basically.
