The major difference in Dybala and the players you mentioned is that they were all at, or near the end of the line. Dybala is just hitting his prime, and like the aforementioned players, has been a model citizen, and has profoundly expressed his love for this club.
He could be this generation's Del Piero for us, and why on earth would we want to let that go? Because of money? There isn't anyone out there that we could remotely replace him with that would be attainable. Let's say we get Isco and 50 million for him. What do we do with 50 million? We certainly can't get someone to replace Dybala. So where does it go? We would literally be leaving Ronaldo with no one else upfront with him. Another Midfielder? Great. Then opposing defenses will put 2 men on Ronaldo, and take their chances everywhere else, and mind you, we don't have the midfielders that could score from anywhere on the pitch like we did with Vidal and Pogba. There is no legitimate scoring threat from the midfield as things currently stand.
