I chose Iuliano because all 4 midfielders tend to be pretty offensive, so Iuliano can just stay back all the time and help our fragile defence, same goes for Thuram. We will have enough of an attacking threat from the midfielders and Del Piero to create for Trez.

Hmm I'd rather see Maresca in a more advanced role, as his creative skills would be of more use further upfront.
I'd just use my formation but move Thuram to the centre and Birindelli on the right. Or play a 4-4-2 with a flat midfield.

Yeah, a flat 4-4-2 would work well I reckon. Appiah and Maresca would form the central midfield partnership, flanked by Zambrotta and Nedved who should be able to offer the required width and threat down the wings.
