I just don't get why Prandelli doesn't play a 3-5-2 against Spain. It worked really well both times he tried it, while he was completely destroyed in the Euro final using a 4-man backline.

It more had to do with lack of width and injuries rather than 3-5-2. He got carried away with win vs Germans using 4-3-1-2; 4-3-3 with good wingers could work as well, but Maggio shouldn't play in that case.
