I do however think Demiral gets a lot more cover in 3ATB because of two other CBs to cover for him.

If you're a brainless troll CB, 3ATB is the best formation for you. I think it's part of the reason he wasn't really seen as an option here once it became obvious he was unable to maintain control of his position in a back four formation.
