Seriously though, How can I make a baked potato soft and smooth to the point that I can cut through it like butter. I had one in a cafe a few weeks ago and I'm going insane trying to recreate it.

go to B+Q,buy a 6-8 inch nail and clean it.
skewer the potato with the nail,the nail will heat up and cook the potato from within,ensuring it cooks evenly

Even when I use potato nails, well skewersm it's still to hard , I'm talking like creamy mash consistency :depressed

it depends on the kind of potato you use too,though i usually put cream cheese instead of butter and just mulch it all in
