I want to be able to convert .wav or .mp3 files to .mid. I searched, downloaded, installed and uninstalled several applications with no luck.

I used to have one or two conversion programs, but they were all trials, so I forget what they were. I think iTunes does some conversions. anywyz, I found this on download.com, maybe you ought to check it out:

www.dbpoweramp.com can convert most types of music files, with the right codec.

I've tried before that conversion before (Back when i wanted a cool ringtone on my cellphone) ... Can't remember what tools I used.

In anycase, I think when converting from .mp3 to .mid you end up losing a significant amount of quality.
