Siding with the minutmen is an option by the way. But it requires you to fail your quests for the other factions.

I'm really enjoying this game, specially building your own settlement and all, but they're becoming way too many to tend to, and its getting annoying

Question, I'm doing minutemen quests and right now he's only sending me to secure and build radio stations in settlement after another, does it ever end or is it an endless mission?

It ends when you progress the story enough. When you hand one in fast travel straight away then avoid garvey.

They do end but it's not like there are 20 of them, they are unlimited and end when you get to a certain point in the main quest. This will only happen if you choose to side with the minutmen for the end game. However, you won't get this option unless you willingly or unwillingly fail the end game quests with the other factions.
