Because the offside rule states that there must be two defending players (including the Gk) closer to goal than the opposition striker receiving the ball and if the Dortmund player who scored had only one player (Malaga's last defender) between him and Malaga's goal when the pass was played then how is that not offside?
First time I hear about this.

this
Santana on that last frame is offside - goalkeeper counts as just another defensive player in this situation i.e. it's no diff than if you had the Malaga GK and line defender exchange their positions.

How the fuck did you get this from what I wrote?
I know it was an offside and the offside rule has nothing to do with the goalkeeper - he's just a player like the others.

No, last defender is still in play
last defender is that guy on the goal line and Santana is between him and the GK - for there to be NO offside, Santana needs two Malaga players (field players or the GK) between him and the goal line. Here you have just one, which means offside
