Anyway, it's very hard to answer your question. Until the early-mid 90's, the players who started the match always wore numbers from 1-11. Players didn't hold a number for themselves.
For example, if Platini usually had #10 and if he was suspended for some match, then someone else was going to wear the number 10 on that match.

In the last 14 years or so, these are the Juve players who wore number 6:

1995-1996 Paulo Sousa
1996-1998 Dimas
1998-1999 Thierry Henry
2000-2002 Fabian O'Neill
2002-2004 Salvatore Fresi
2005-2006 Robert Kovac
2006-2009 Cristiano Zanetti
