The most ravenous Juve fans are in the Curva Scirea South [green]. Of my pictures, most of the flares and all were taken at that end of the delle Alpi. When you watch TV coverage, they're typically on the far right by way of the TV screen. (I was sitting on the second tier of the unlabelled swath just to the left of what's marked "Settore East" for those pictures in the diagram here -- for some reason there's no key for it on your map. It's pretty much the center of the stadium you see across from the TV cameras in match coverage.)
There's a smaller, but still vocal, group at the Curva Sciera North [purple]. Bordering them, save for the separation of open stands and heavy security, is the area on your map marked "Tribuna East" ... which is often where the tifosi of visiting teams seem to congregate.
Personally, where I sat (as mentioned above) -- or the Settore East -- was awesome. The middle tier has the most respectiable angle of the pitch (don't settle for first or third tier, IHMO), and I was close enough -- but not in -- the Curva Sud action to enjoy it. Of course, the tribuna has better views at the expense of costlier seats (though not by THAT much) and not being in the thick of the juventini -- but I think it's worth it.
