Is there a difference in pronouncing the words each and itch (as in itching)? If there isn't, then it will explain why some use the T for -ic.
If there is, then I think that each is closer to -ic. Actually, each is the same as -ic.

the "t" in this case is primarily to strengthen the "ch" sound to make it more distinct. You don't really need it in any case. Makes no sense but then again when do we make sense?

Really it depends on the word itself but yes a t is used to sharper and strengthen the word.

It has also got to with word in English that end in ic such as prolific, acerbic etc.

I'm not English language expert but without using itch we would pronounce it
